OK, the verdict is in. I sampled each type; plain, plain with sauce, barked,and barked with sauce. Each type was sampled on a plain hamburger bun. They each had their own appeal, but it was easy to conclude which one was best......whichever one I was eating at the time.

The sauced pork was better to me, but my wife preferred it without. I foiled the dry-brined butt at 165 degrees, but I let the barked butt go all the way without foil.The barked butt was firmer than the brined butt, but the brined butt was much moister as you would expect. Did I eat too much? Yes I did! My stomach is so tight you could break a beer bottle on it.
 
Send samples I will help with the judging! I prefer bark and just some sauce on top personally.
