Here goes...First butts

Council Bluffs Ia.
Picked up a package of butts at Sam's a few days ago. This will be a new experience for me. About 15lbs. for the pair. I don't know what the individual weights were, but one was a bit larger than the other.





Well, here it is about 5:00am and it is cold and dark out here. Quite windy too. Hope I won't have too much trouble with the temps.

Here are the butts all rubbed and just put in the smoker:

Everything look great so far but how are you smoking it are you gonna foil it and what temp will you pull it from the smoker. Just a couple of questions and I will stop back bye and check in on you soon.

That's where I get my butts and they turn out very good.

I weighed them a couple of times. The large one is always around 10-11 pounds and the small one around 4-5 pounds. One finishes early and you can start eating it sooner.

Ok, here it is about 5-1/2 hrs. later. This whole time the small one has been ahead of the larger one. Now all of a sudden, it's the other way around. Go figure. I didn't expect to be this far along already. I was expecting them to stall at around 150 - 160, but they just sailed through. They are both at 163 at the time of this post. Would they stall at a higher temp? Anyway here's some Q-View:



mballi3011: My plan is to pull them off the smoker at 170 - 175 and foil them and put them back in until they hit 200 - 205.

Oneshot: I am using a combination of hickory and apple. Hoping it comes out good.

Going to run out and see if they are ready for foil yet. I'll be back.
 
Just plain apple juice. Wow, that went fast! Three hours after foiling they both hit 204 at the same time. If they stalled at all, I think I missed it. They're all wrapped up in towels and sitting in the cooler now.

More Q-View when I take them out to pull.
 
I went and took a nap while the butts were resting in the cooler. (4 hrs.) When I took them out they were still way to hot to handle. Had to let them cool just a little. Here's the first one out:



The other one looks just like it, so I didn't take any pictures of it. Now here's the part everyone is waiting for. Two pans full of PULLED PORK!





We couldn't keep our hands off of it while we were pulling it. I'm surprised there is any left for our meal. It came out extremely tender and juicey. Almost pulled itself while we were sitting there watching.

I have to say, I am very very pleased how this came out for my first try. Now if you will excuse me, I'm hungry and I'm going to get myself a couple of sammies.
