So the boy has been craving some lamb chops so made that happen tonight….
Started off with a double pack imported from New Zealand…..
Very nice pair of chops…..
Rubbed sow with Dijon, salt, kinders, and fresh chopped herbs….
Searing the fat side on the Weber….
More searing to get good color.
Then up to the top rack to roast….running the Weber at 400 ish….
Once it his 100 INT and started to release some fat I did another sear on the grate level…
Then back ti the upper rack to finish roasting to temp….
Bingo 130 ish INT pulled to rest in the house oven at 140.
Split sprouts ready for the pan…
Cut side down in oil covered hot Hex pan….on high btu for a nice sear and color
Once they got some good color I added shallots and some butter pieces.
Next up some red pepper flakes, honey, and soy…then allowed to sear up more….
Once tender tossed them in the pan sauce then on simmer to hold for plating…..
The slicing……oh man….nothing but smiles, the INT was 136 at slicing…..
Juicy and tender!
And the final plate….some wild rice and the red currant with fresh chopped herbs!
Very pleased for a Monday night din din!
