Thanks guys... Sole purpose of building this smoke house is for true cold smoking... temperature inside smoke chamber never goes above 60F (15C)... smoking only, no thermal processing...

Thats not a smoker its an addition on your house!!!!. Very nice set up.

Seems to work well also, the sausage looks perfect.

Thanks Corey... yes, you're right... addition to my doghouse...lol...
Here is temp inside smoking chamber as of now...
outside temp around 13C....
with bottom door fully open and chimney fully open there is almost no difference in temperature inside of smoke chamber and outside environment...
