Did 20 pairs of Hungarian paprika sausages...
standard SPG + original "Szeged" hungarian sweet paprika ... first night smoke...

Thanks guys... Sole purpose of building this smoke house is for true cold smoking... temperature inside smoke chamber never goes above 60F (15C)... smoking only, no thermal processing...

Here is temp inside smoking chamber as of now...
outside temp around 13C....
with bottom door fully open and chimney fully open there is almost no difference in temperature inside of smoke chamber and outside environment...
