From reading previous forums, I know that 1 1/2 hours is the "time norm" and 165 is the "temp norm" for a Boston Butt. Please advise me on a thermometer for my electric smoker. We need to buy one and are not sure…..do we get some contraption that feeds through the smoker somewhere? or do we remove the top to check the temp? I hate to lose the heat. I need for you professionals to lead me through this one. My smoker clearly cooks faster than the prediction and I am tired of overcooking things. Clearly I will need to cut back on time, but need direction for selecting and installing the thermometer. thanks
