Help fell asleep

Hey guys, I need some advice. Put 2-7 pound briskets. On my offset smoker at 5:45 PM maintained temperature of 210 to 230 at 11:45 PM fed fire but then fell asleep and didn’t wake up to my alarm at 12:45 was going to check meat temp, and possibly wrap at that time to finish, then jump off the couch at 3:30 AM and smoker temp was just under 100 internal meat Temp was 120. Have no clue what it reached so I wrapped both got the smoker back to 225. Am I looking at a complete fail or is it sable and what do I do from here?
 
You’re fine, just keep cooking! 6 hours at 220 would have taken the IT to above 140.

I have always brought my internal temp on my briskets to 202 ish should i keep it on til it hits that or no i have done a good amount of briskets before over night during the day and they all turn out great this is my first time falling asleep definitely bummed cuz im actually cooking for other people this time usually just smoking for my family

Sorry didn’t realize u said keep cooking must still be half asleep lol
 
Alarm clocks don't alert if smoker failure.
Hi / Low thermometer alarms for meat and pit temps.

Yea it was 100% my fault i fell asleep probably wouldn’t have heard thermometer alarm if i had one i was out cold im definitely not getting younger might have to steer away from over night smokes lol thanks and ohio here
 
Yup, all the tech in the world won't help if ya sleep through an alarm. My wife does it all the time with her phone. After listening to it here in the office while having coffee for 5-10 minutes I usually go in nudge her awake. 🙄

At about 195 start probing the meat with your therm pen or a wooden skewer all over. The brisket is done when the probe feels like pushing into a jar of peanut butter. Temp can be anywhere from 195 to 212, I don’t cook to a specific IT just to soft probe all over.

Let us know how it went! This is one of the reasons I dont seek out cooking for groups anymore. My "Murphy" seems to come out when I need it the least and screws something up...even stuff I thought I could do blindfolded. I even dropped a platter of grilled steaks on my garage floor once. Never did that cooking for just me and the wife. Fortunately it was just my parents over and they are old hillbillies...they said rinse them things off and lets eat! I did, but I put them back on the hot grill for a couple minutes to kill any bacteria which took them from perfectly med-rare to med-well, but we survived!

Pulled them both off bout 30 mins ago didn’t unwrap them but gave a lil peek and tons of juices so sealed back up and wrapped with towels and they r resting smells damn good hopefully taste as good as they smell
 
Well guys thank you and it turned out great everyone loved it 14 hour smoke plus 3.5 hour nap 🤣 brisket was gone in 15 mins wish i would’ve took a pic when it was done i only have when i started

Almost every smoke I do that is long lived gets the Fireboard setup plus one of the probes is for another ambient reading. I set low alarms for the extra ambient probe and that has saved my "butt" several times when I've had a flameout for whatever reason. The audio alarm with Fireboard will wake the dead. For the most part the apps for the onboard controllers that allow for low alarms are audio weak sauce and mostly not changeable.
