Help! Baby Back ribs for 50

Hi!

I was wondering if anyone had any tips on holding/reheating ribs.

I'm throwing a bbq for 50 ppl this weekend and plan to smoke 15 racks for my guests. I only have one smoker so I was thinking I'd start them then cool them down, I've been using the 2-2-1 method and it works great.

Does anyone have any suggestions? I was thinking maybe:

Start them uncovered for 2 hours in the smoker

Remove, foil + add liquid + refrigerate until 3-4 hrs before party starts

Remove bring to room temp

Cook for 2 hours covered

Remove, cook for 1hr uncovered..

Any suggestions!??! or better ideas?? :)

you could do them all the day before and refrigerate
reheat foiled in the oven , or in a roaster.
or toss on the grill for a few minutes after letting them get to room temp.
 
I've held ribs in a cooler for 4 hours and they were still nice an warm.
 
I would just smoke the and refrigerate and then re-heat them in the oven slowly and you'll be Golden.
