Just realized I never followed up on this. The snack sticks turned out great and at least "looked" cured. I did make sure to get them to 140 in 4 hours and then to 155. Alas I probably did that too quickly because some had a bit of a fat out but otherwise they were a success. Thanks again for all of the help!
