Just replaced my 18 yr old New Braunfels smoker with an Old Country Pecos model.
In the past I've perfected my techniques on pork butts and brisket, but would really like to perfect ribs. In addition to bbq, I enjoy home brewing as well. Cheers!

Welcome to the forum!

Like you I struggled with ribs for a long time.

Then I finally figured it out. Cook them by temp, not time.
