I replaced the wife's 30+ year old gas range with a very nice new one as a surprise Christmas gift. In "retaliation" she bought me a MES 30!
So.. now to learn how to use it!
Got it seasoned in, then just for something to try, did a few Ribeye steaks she had marinated as we would have normally for grilling.
They were awful!!
Tough as nails, but I think I had two good reasons why. First they were bad cuts, seemed gristly. And the smoker went off twice during the smoke and would not even turn back on unless I unplugged it and plugged it back in so I had a temp roller coaster going on. I was about to call Master Built support but decided to make sure I hadn't pinched the wires when I put the control box on top... I had not, but when I unplugged the two plugs just to check, I noticed that one of the pins was not fully inserted and latched into the plastic plug when assembled at the factory. This caused a bad connection. I fixed that and ran it empty for a couple hours and it stayed on so hopefully no more issues!
I have read a BUNCH here and am grateful for the info, Thanks. I saw on my first attempt that I wasn't going to like the rapid burn of the chips and just ordered the A-MAZE-N tray and some pellets.
Next attempt will be a Boston Butt / pulled pork. Real hard time here settling on a rub / Finishing sauce. There is a guy I work with that smokes and competes as a hobby and his stuff is GOOD but I don't know how much info he will share!
OK enough rambling for now so lets get to my first quick question...
The wifey says she has a butt in the freezer... Is that a no-no? Should I pick up a fresh one? I just don't want to doom myself before I start!

One of "US" on the square in Lynchburg TN, Yep, live about 20 min away form Jack Daniels Distillery. Nope., never made it to the big Q shindigs there.
And, a couple of my backyard renovation (work in progress, 2 years in, all done myself) including a screened gazebo and patio, where we will be (hopefully) enjoying some Q with friends and family soon!
