Hello. I am new to smoking

I am again smoking several different cheeses. This is my second attempt. My first one received good ratings. I did this with my cold smoker. It's attached to my Masterbuilt 40" smoker. First batch was cheddar. This one is Swiss, Gouda, and cheddar.
