Hello from Wyo

I'm new to smoking, but my son-in-law is not! He and my daughter got me an MES30 and I'm excited to get started. I'm retired and live in Torrington, which is farm country on the North Platte river and not far from Nebraska. Cattle feeding is big here. I harvest and consume wild game and fish and will be getting going on some of that for sure, but I have no biases against beef, pork, poultry or game meat.  I most likely will not be experimenting with nor posting any mutton recipes - although a leg of lamb or lamb chops come to mind!
