Greetings, I have been smoking fish and meats on a recreational basis for about 45 yrs. I thought I was somewhat accomplished concerning this art form. Boy was I wrong! I have learned more in a few short weeks reading this forum than I was able to learn on my own in all of those years of trial and error. There are some very knowledgable people on this forum and their advice is invaluable. I generally mix up and smoke about 250 lbs. of kielbasa for the family each year. We have a rather large homebuilt that will hold 100 lbs per session. I have a smaller homebuilt and for Christmas I received a GOSM from the family. The portable is great and for Christmas dinner I smoked up Cornish Game Hens and since then I have smoked 25 lbs. of venison snack sticks, The GOSM is a bit small so I can only do about 12 lbs per session. Anyway thank you folks for the great advice.
