My name is Eddy and I'm from the Netherlands. I've been cooking on a small offset smoker for a while now, but I'm currently working on building a traditional 100 gallon offset smoker from thick steel.
In the Netherlands it's hard to find well-built traditional offsets, so building one myself seemed like the best option. I'm especially interested in traditional stick-burning offsets and fire management, and I cook year-round in our cold and damp climate.
I'm still learning and trying to do this build the right way, so I'm hoping to learn from the experience of people here.
