Hello From Texas

I am from the Great State of Texas.  I am a disabled State Law Enforcement Officer and now I pastor a small Baptist Church in the DFW area.

I am not new to smokers, but I am new to a pellet smoker.  Looking for tips, recipes, do's and don'ts.  Looking forward to learning and maybe even contribute some.

I have friends and family in TX.
My dad retired from the Navy after 20yrs, then went back home to Lubbock and served another 15yrs as a Sheriffs Deputy.
I kind'a tagged along with him for several years.

Just did my first ribs and they had good flavor, but were tuff. I may not have left them wrapped long enough.
