I've been grilling and smoking (mostly) successfully for about 20 yrs. Haven't put anything out that wasn't edible.
Started with a cheap second hand barrel smoker, hated it because accessing the meat was a pain and coal mgmt vents were crap. Add to that, I had no idea what I was doing.
I know........ it's the indian, not the arrow.
Kept at it and ran through a few options:
-Another barrel smoker, no idea what the brand was.
-CharBroil The Big Easy infrared cooker, cool idea but the smoking options were a second thought in the design.
-Weber 22, had my best cooks on this and still have old faithful. My go-to when I have plenty of time.
-Weber Smoky Joe 14. When you really want charcoal flavor on a dinner. Never done a big smoke on it, but I've wanted to try.
-Weber Genesis Silver B grill. Used with smoke tubes. Workhorse of a grill.
-Masterbuilt 30 inch analog electric smoker. 1st gen. Great little smoker, super easy but filling the chip tray extended the cook and bark was non-existant. Convenient but its a slot solution. Sold when I started replacing components.
-Weber Genesis Series Grill, smoke tube option. But mainly used for grilling with the griddle accessory. Spectacular grill.
-Masterbuilt 30 inch digital electric smoker, nice unit but for all the same reasons mentioned above, the hunt was back on.
-New to me RecTeq Bullseye. Latest addition. First pellet cooker Ive owned. Picked this up used. Did a deep clean on it. Ran a couple of cycles to learn how it behaves.
Love the design, BUT.... Did a bunch of research and read a bunch of reviews where it was mentioned that this pellet cooker generated more smoke than other pellet units. That set my expectations but Im disappointed with the amount of smoke in the Lo setting. That's the setting below 200 deg, where its supposed to put out the most smoke (for a pellet grill).
Im still new to it so I plan on trying some things. I really like the high heat Riot 700 deg setting for searing.
So, back to my Weber 22 I go and the learning continues.
If I find a decent stick offset smoker locally, I'll have to take a swing at that.
