I'm Tim and new to the site. Been smoking for 18 years. Mainly use 1400 lb custom made smoker from Houston Texas. For smaller jobs I sometimes use a Big Green Egg or a gas grill. Never been in a competition but my family and friends always seem happy with my results. Looking forward to trying some new things. These "fatties" look pretty interesting and I'm not sure why but I've never done chuck roast on the smoker. That's gonna change. Just a few pounds of pulled pork.
