Stumbled on this site while searching for new recipes. Looks awesome. I have been smoking meat for a few years, I currently use a digital Bradley and a charcoal grill for smoking. My wife is a pastry chef in a high end restaurant that smokes a lot of food, close friend is opening a BBQ restaurant. So I have a good knowledge of what I am doing but still learning.
