I've been using the methods on Dave's site for a while now with my small offset that was purchased at Lowes.  A Charbroiler with the mods.  Last weekend, I found my long awaited Lang!  This weekend it will be put to the test.  4 Butts, 1 brisket, 6 racks ribs, 6 chickens!
