Hi, just logged on to learn. I have been grilling a lot and have a natural gas grill piped into the house gas system. We started doing long slow cooking a couple years ago on the gas grill. We love doing the rotisserie with chicken (and when I am home alone, duck and rabbit).  I will be having a little more time to do more, and would like to get a smoker. Not sure what I want to get, I was thinking charcoal and wood; the kids think electric. I would like to learn more about rubs and making BBQ sauces. My wife is mild, I like a little more zip.

I hope to search the archives and join in as I learn more. I am sure there is a lot of good information here with all the experienced folks that are posting.

Welcome to the forums!  You've found the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks here who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.

I will keep an eye on the PA smoker pages. For now, I will continue to use my gas grill. We have a brisket to do possibly this weekend. I usually stoke up the grill hot and sear the outside of a marinated and rubbed brisket. Then put in a foil pan, and cook with only two outside burners on low and 3 inner shut off totally. I put chips in foil over the firing burners to get some flavor. It runs at about 200F for 8-9 hours. Comes out great.

Maybe for Christmas, a smoker will come down the chimney.
