Hello I'm new to the forum but its great to be here. I will post some pic of my pig/chicken smoker /roaster. I live in Mifflinburg PA and love to hunt and fish and smoke some good food.

Thank you guys. and here is my BIG ?

I have built a big smoker roaster over the summer and have used in many times but i can not get a even temp over the cooking area (have a lot of cold spots) if i add more charcoal then it gets way to hot to cook on. like i said its big its right around 4 foot by 5 foot I have a lid on it with a 4" stack and the cooking rack is 16" from the charcoal rack i have a 4" draft for air flow and the charcoal is right under the cooking rack. Any help would be great thank you.

PS Do you think a a offset fire box and RF plat fix this?

and do you have to have a baffle plat when you have a fire box?
