Little about me I run a catering business in the Oxford, Ms area Hotty Toddy Friends! Looking forward to being part of the forum. I'm always looking for new ideas to add to my catering menus. We are best know for catfish & bbq. I do all types of meat on the smoker. I use two Ole Hickory Smokers. Been smoking for for over 20 years. Started with wild game as a kid harvest from my personal hunt sharing with friends. About 60% of my catering business is some type of smoked meat. 
 
Welcome Catfish61!  Glad you're here!  You should get lots of ideas because this is one creative group of folks. 

Mentioning catfish and the South brought back so many memories from decades ago when I lived in Chattanooga as a teenager.  My dad loved to take Saturday or Sunday drives out in the middle of nowhere in GA and AL and we often stopped at little hole-in-the-wall catfish shacks and BBQ joints to eat.  Good times and delicious memories.  Thanks for the morning smile! 
 
Hello , Catfish . I love my smokmed Cats , been a long time ,I don't trust the fish out of Lake Erie (remember the water thingy) .

As for a bit of change of pace . . . do some snack type thi gs . Fatties filled with Cajun goodness , ABT's with Crawfish stuffing , Turtle , and just for giggles , Smoked Snake

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
