From one Okie to another.. welcome to the forum. I recommend you get a smoker and get started as soon as possible. Depending on your budget, you can find smokers as low as $40 on up into the thousands if you want to go big.
You also have some options.. I prefer wood and charcoal smokers but there are also some really good electric and gas models that will do you right if that is what you want.
Welcome to SMF....Jeff is right. Go get a smoker and getter going...You will never turn back. Chicken is easy to start with. It is easy to smoke and if you mess up, it didn't cost that much...
