Hello, just made the name for fun you can call me Matt. I live in Aroostook County Maine (look it up lol) I am fairly new smoking, done it for a couple of summers now, but I am not new to cooking and working with meat. I attended the New England Culinary Institute in vermont and have been cooking professionaly for close to 9 years now I think. I have a kingsford barrel  grill that I use, just build the fire to one side, but I find it a challenge. I usually need to wrap my que in foil and finish in the oven ruining any nice crispy bark I had. I cant figure out how to maintain my fire and smoke without having to open the smoker frequently. I was given an old offset smoker last year that was ruined but thought I could salvage the fire box and attach it to my grill but it didnt work out. So I came across this place and thought it would be a great place to get some tips and maybe even give some lol I have a mean pork dry rub I make for my pulled pork and ribs. I also make my own scratch bbq sauce that is a thick and sweet style though I do want to learn a good carolina style vinegar bbq sauce. So yea thats me!

Welcome Matt,  so what's the schedule for the new smoker?    You know if you don't want to buy a little Brinkman you can pickup a used drum and build a UDS (ugly drum smoker) for pretty cheap.  They produce some great Q.    Glad you joined us.  If you want us to help you spend your hard earned money we are sure happy to give advice about the different kinds of smokers out there.

Unfourtunatly a new smoker is not an option with no job an almost 2 year old daughter and son due in July. me my wife and kid are living with my parents right now so that wont happen. But Im hoping to get help working with what I have. But we are having VERY unseasonably warm weather so I will be cleaning and firing the grill up tomorrow, probably just for burgers and get smoking within a week most likely.
 
I just feel you are going to run across something but regardless just ask and we will help anyway we can.

to SMF . There are lots of friendly and helpful folks here. Maybe post a picture of what you are using over in the smokers section and see what the guys say. 
 
Welcome to SMF, Matt. So whereabouts in "The County" are you? I think you're about the fourth Mainer that's joined in the last couple of weeks.

Terry: I will work on getting it up I think I made a picture series on it once to show amounts but I dont measure things lol so Ill try to actually make a valid recipe if I can.

Hello again I have posted a few times and gotten a few responses saying regulars still hadn't seen me around so I thought I would try posting in here gain see if I can get this noticed and make sure I introduce myself properly so I don't come off as presumptuous.......or something lol.
