I'm new to smoking. In fact, my first effort is on the Masterbuilt Electric Smokehouse 30" as I type this. I've already learned a lot reading this forum the last few of days. From deciding which smoker to get to planning this first smoke. I just got the smoker yesterday, so I needed something that wouldn't take much time since I had to assemble and pre-season this morning. As luck would have it, Jeff's Cornish Hen's article was right of the front page. And I found some good ideas on the veggies forum to go with them. Can't wait to taste it!

I'm going to plunge right in and try a brisket tomorrow. I picked up a 5 lb flat from a local meat shop today. Now to find a place I can get one with the point.

The hens turned out great last night. I have a brisket on the smoker now for tonight.

Welcome! The MES is great, you'll love it! Diving into a brisket right off isn't the easiest but if you did some homework you'll be fine. Get ready... You're about to be addicted!
