Greetings from near Dallas. Found this forum searching for Coppa. Plan on curing a Coppa, but having now seen one smoked on a thread in this forum it is now something I MUST try!

I cooked on Weber Kettles forever it seems, and even smoked briskets and ribs on them, but I bought a Camp Chef pellet grill with the propane seer box attachment late last year and have not looked back. Just love it. Nice to find an active Meat forum and I look forward to digging through all the wonderful information here!
