Hello and welcome . I am also in Mexico, I have lived in Catemaco, Veracruz for over 10 years.  I also am trying to get into smoking and have been reading most anything I can find, plus following along on this forum/\.

  My plan is the MES, 30 inch unit but shipping alone costs more than the smoker so I am waiting for friends to come down this winter to have it delivered. In the mean time it is reading and learning.

  I would look at some of the home built smokers shown in one section of the forum. What you need depends on how much you need to smoke for your business. You could go small to start and just add another smoker as you determine the amount you need daily. 

  Keep reading the forum for ideas and information. Have some fun.  There are thousands of exPats and winter visitors from the US and Canada in your area so I think you are on to something.
 
Hi gen0, yes catemaco is too far from usa and is very expensive to shiping. To send to Guadalajara is chiper. I recomend tou the gas smoker because in mexico the electricity is more expensive.

 Yes, electric is very expensive here.  I have a three burner gas grill, two charcoal grills already.  I chose the MES because I would like to try some cold smoking, especially with the queso hebra made locally.
