Hello to all. I found this forum while looking for tips on how to get my smoker hotter.
I've been smoking for a about 2 years now. I started off with a Char Griller Offset smoker.
I love it! My wife decided to surprise me with and reverse flow wood burning offset smoker she
had custom made by a gentle man who has been making them for about 5 years now.
The smoker looks like a solid build but I'm having trouble getting it above 200 degrees.
With my Char Griller I set the firebox vent to open all the way and my top vent barley cracked
open. The temps would hit 250 no problem. With this reverse flow I have both vents all the way
open and it will not go past 200. I've tried closing the fire box vent more and and also the top vent.
This drops the temp to around 150 degrees. Any suggestions?
