Hi Carlos here from Eugene Oregon. 100% Puerto Rican, born in the States, raised in NC. I am a Roads Project Engineer for the Forest Service. I love my Texas Elite for general bbq but I also love cooking whole hogs on my own homemade pig cooker. It's about 8 yrs old. Just finished my own design, Traeger inspired, upgrade.... An adjustable drip pan system that is designed to eliminate grease flare ups and deflect heat for indirect low and slow smoking. Charcoal/apple wood chunks cook underneath in the 4 corners. Should help keep the whole pig cooking at a more consistent temperature and make for easier clean ups. I'll find out next week! I have abother 150 person pig roast at work to do. I always get great tip from this forum so I though I would join! Thanks for looking.
