Hi everyone!  I purchased a GOSM smoker just under a month ago.  I'm new to smoking, so I'm reading and learning a lot!

My 1st time out, I tried ribs.  I went w/ the 3-2-1 method, and they came out pretty good.  I was surprised to have some success right off the bat.

Last weekend, I did a Boston butt.  I smoked it for 5 hours, and then I cheated by cooking it in the oven for another 7 hours.  It came out unbelievable!  I hope that I can repeat it before too long.

Today, I did my 1st beer can chickens.  I cooked them at ~ 280°F for 3 hours, but they still weren't done.  Next attempt, I will throw time out the window and just go by internal temp!

Oh well, I guess you can't win them all!  I'm looking forward to continuing to read and learn from everyone.  Thanks for sharing your experiences w/ us new guys!!!

Yea you can throw time out the window (except ribs) and cook to temp, it's the only way to be sure things are done as they should be. Get a good therm and you will thank yourself later. My Maverick is the best thing I've bought besides my smoker.

Howdy TN... welcome to your new addiction... sounds like the first few smokes were a success.. as was mentioned.. get yourself some good therms... As far as Cleveland.. we have family there and vacation there often... We bring the camper and stay up at B&B marine... I think next time (Oct. maybe) were gonna look around Harrison Bay... but anyways.. welcome to the forums... you'll learn a lot here...
