I've posted a few times but haven't gotten around to introducing myself. I live in Denver, and I've been smoking in a GOSM for about a year.
I'm originally from Macon, Georgia and my grandparents owned a BBQ joint before I was born. My dad worked there so growing up I ate a lot of southern Q and helped making and smoking various meats, etc. My other grandfather is from Louisiana, and he built a grilling/smoking pit from brick and a split oil drum that he had on hinges. I used to help him gather and split wood a lot, and my best recipes are from him. Unfortunately (or not really), he didnt write much down so I learned to cook from feel and taste. Once I get around to it I will get his chicken recipe (slow grill/smoked with a vinegar/horseradish/butter/etc. sauce) and his smoked oysters on the half shell recipes written down and share them. He was the best cook I knew. We'd drive an hour to a slaughterhouse so he could pick out his own chicken and take it home on ice. I could go on for hours so I'll spare you.
I've recently started cold smoking (AMNPS) and this site has been a great help. I got a deal on an industrial slicer off of craigslist and should be carving up my first batch of belly bacon tomorrow. Used pops brine with a couple of garlic heads, quartered onion and peppercorns.
As an aside, I should say what a great product the Amazin pellet smoker is. I have not yet been able to get it to work for hot smoking in the GOSM, but I was an idiot yesterday and did not check the weather before setting up my smoker to cold smoke bacon all day. It was about 30 degrees when I set it up in the a.m. and by 10 a.m. it was raining, sleeting and snowing outside. I looked out the window all day worried my bacon was in trouble, or that the smoke would go out, something. I got home about 7 p.m. and the thing was still smoking away on the third row of pellets and the bacon had a orage/brown hue. Unfortunately, I didnt get pics because it was dark outside and I was in a rush to get it in the garage fridge and head out to a Valentine's dinner with the old lady. Anyway, the amazin pellet smoker is a machine! I'll try to get some pics up of the finished product.
