Hello, everyone. I joined back in 2015, made a few posts and then... didn't. Never stopped smoking, though, or reading posts. Moved from KC to southern Maryland in 2024 and kept honing the arsenal.
I added a custom-made offset on a PWC trailer that I picked up in Connecticut this spring. He hadn't run it in a few years, so I cleaned it up and painted it (using suggestions from the forum).

Been playing with selling some of my favorite dips (hummus and salsa) but there are some bumps to work out on the legal/health department side. I have to find a commissary kitchen that is either already licensed or can be with the county and will take me on. The catch is it's a rural area so not a lot of options, and in the nearest town (20 minute drive) most of the kitchens are booked up already.

In the meantime, I'm cooking, honing recipes, and playing with posting Youtube videos under "Should I Smoke That"

A lot of churches have commercial kitchens, at least around here, won't hurt to ask. Offer free labor to cater their events in return.

Thanks! The volunteer fire house is a mile from here, but their kitchen is not rated. I tried to talk to a country church not far away with a meeting hall but it dead ended. Then I got busy with life and my actual job... need to get back on that. Thanks for the reminder!
