Howdy,
Arizona transplant here so Mesquite is an automatic favorite.
Recently won a Pit Boss 440 Deluxe and am in heaven. Always wanted a smoker but, fishing and hunting goodies were ahead of buying a nice smoker.

Smoked a small roast to medium rare and it turned out great. Now, everyone wants me to do a Brisket.. Gee, thanks for making it easy guys, how about another roast maybe?

At any rate, the main question I have is do I place the brisket in the smoker when the temp gets to 200+ but still set on Smoke or, turn it off smoke to the 200-225 setting then put the Brisket in? If I should put it in while on smoke, how long should I wait before setting the temp to 200?

I don't know your smoker but I would suggest heating it to 225, turn it to the smoke setting and then add the brisket.

Not familiar with your smoker.
But there are plenty of guys on here who are.
Hopefully one will be along soon.
