Hello from Belgium.

    Well, I'm the proud owner of a cactus jack 20" chuckwagon for about over a year now.

    Still trying new stuff all the time, I just love the way it barbecues ... slooooow ,,, hehe  kinda like me,, easy and slow (don't read lazy)

    Problem is... didn't have a manual ... so had to start digging the internet ... and trying stuff on my own ... nobody I know has a smoker .... wich is understandable ... I live in Belgium .... you have about 20-30 days a year you can really use an outdoor bbq  :D

    I know it's a small introduction,that probably didn't make much sense .. but didn't really know what to say ;)

    We love to see pictures of what you are cooking (or what we call q-views here at SMF).  To "upload the q-views" just follow the directions here and it will be easier. If you are using a cell phone, an IPad or a kindle, go to the main SMF page and click the Mobile button. Will make the uploads a bit faster too.

    If you didn't read the "Terms of Service" notes.....please do.  There are a few things that everyone should know about those pesky little rules before plunging into the forums and some guidelines of how to interact within the forums.   4. Glad you joined the group. The search bar at the top of any page is your best friend.
    About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
    and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
    We are all smoke junkies here and we have to get our fix. If you have questions Post it
    and you will probably get 10 replies with 11 different answers. That is because their
    are so many different ways to make great Q We all have our own taste.

    Thanks for the tutorial, had to wait for the wifey to sleep so I could read it with the neccessary attention lol :D

    I usualle start making a pile of wood, squar-like, several blocks high with lot's of air holes, then I take my gaz-burner and fire it up...

    close the smoking room, and let the temp rise to 100-120 c°. for slow cooking.

    two things...

    -no peeking ...that's kinda hard when you're having people over, that want grilled stuff like saussage, burgers etc ...  so the first hours you can go low and slow on the ribs, but then you need to up the heat a bit for grilling... and stay alert so it doesn't burn.

    -second . when you need more heat ... you need more wood ... and I find it hard to up the heat with small pieces of wood, but like you said ... that usually results in thick white smoke ....

    and some ppl allready told me that the meat is sometimes to smoked for their taste.. :(
