I have owned a smoker for a couple of years, doing mainly ribs and Iowa chops. I have also done a couple of butterflyed pork loin, a ham, and a brisquit. I have been using a brinkman water smoker for the most part, that I converted to use either electric or charcoal. I just built a propane smoker out of an old freezer that I found on the land that I hunt on. I am still messing with it trying to get the proper burner for it. My first one heats it way to high.
Looking forward to trying my hand at making summer sausage and brats out of venison later this winter. So I might be picking your brains some in the near future.
