My name is Josh. From the great country that is Texas! Live south of Houston near Lake Jackson/Freeport area. This is my first big step into smoking. Before now I've Q'd low and slow but want to jump into briskets and larger cuts of meat. Always looking to try new methods and make myself a better griller. I have decided to move out of the shadows because I am in the process of making my first UDS. I will make a thread shortly to show off what I've done to it and things that may have worked for me. Look forward to plenty of good conversations.
