I guess I'm the new guy on the block. I live in the north west side of the DFW metro mess of Texas. My wife gave me a 30" Masterbuilt Electric smoker for Christmas, hence the name LazySmoker. This is my first serious venture in the world of slow smoking food. I've grilled on charcoal and gas grills for years and have had some success slow cooking on them. My first venture with the masterbuilt was a beer can turkey and it turned out great. I've done many chickens on the grill this way and have wanted to do a turkey but couldn't on the grill due to the height of the turkey. I cold smoked some cheddar cheese Monday evening and tried it last night, very good. Today I have a rack of ribs on the masterbuilt. I made a rub and prepped them last night and got them started about 2 hours ago. I'm trying the 3-2-1 method and see how they turn out. I'm looking forward to learning from all of you and hopefully I'll have something to contribute.
