My Cousin is in town for the holidays and invited me over to my Aunt's house to celebrate my Uncle's birthday. It was a great time to hand deliver the 2 year aged Culatello that I made for my Cousin...

We went through some really good bottles of wine too!!

Opened a bottle of the Super Tuscan wine I made with my Uncle in memory of him to commemorate his passing on his Birthday.

What a great day of food!!!!
 
Top to bottom a killer spread! Not sure why, but the claw sticking out of the pot of gumbo made laugh like a mofo.

Thanks mr_whipple. Gumbo crabs....mainly for flavor. Just can't replace that taste of meat on the shell in the pot. The crabs in the shell are normally eaten the next day.

The cut of that Culatello is astounding. How did you get it that delectable paper thin?

Loved your Aunt's correction of horseradish sauce. Tomato has no part of that sauce to my liking in taste. Double the horseradish paste for my taste. I love the bite.

I used my deli slicer. The culatello is roughly 45% weight loss after rehydration with white wine. It dried to 49.5% prior to rehydration, so it is still very firm and easy to slice paper thin on a slicer. Those slices are roughly 0.6~0.75mm thin....

And that sauce is legit. Holy crap good!!!!
