Anyone ever smoke a full hangar steak? They are not cut into portions yet and are both running about 8 lbs a piece. Not alot of people have even heard of this cut...I describe it as the tenderness of a filet and the taste of a sirloin.
Thanks

Is this the top muscle of the diaphragm? If this is the one, it is very tender and tasty. I have heard it called a "feather steak" here in rural areas.

Please correct me if I've got the wrong cut. Happy Smoking from Sedalia, MO.

Never heard of that cut myself. The flat iron steak is a newer one also and seem to be qite popular. It sorta looks like a flank but alot more tender. keep us posted
