I am buying a half a hog and having it butchered. The price includes smoke and cure. Should I tell them I do not want the ham smoked?

I guess it would depend if you want smoked ham....right? I'd rather just get all the meat cut into it's specific cuts and process it further myself...curing, sausage, and so forth.

Its whatever you feel most comfortable with. I would let the butcher if its still a new thing to you. Build your way up to it. Starting with cheaper cuts. You can always double smoke the Bear way.

Double smoked ham is good.

Thanks guys! I have done Bears double ham several times now and love them.
