Had to end summer with SOME ribs

It’s been a while and I’m a week late, but here we go...

Last weekend I was closing our pool, which takes all day Sunday and we haven’t had any ribs all summer so I went for it (sort of a farewell to summer meal). Two racks of ribs on the WSM with apple chunks. Using a variation of Al’s temp plan, I smoked them until the reached around 187. I then moved them on to the grill and coated them with Sweet Baby Rays until they hit 195 (the grill saved some time and helped get the sauce to that “sweet spot”). The Mrs. got some asparagus and potatoes together and we had a nice Sunday dinner.

It was great to have ribs and my wife said they were my best ribs yet. I’m not sure if they were my best, but happy wife, happy life. Thanks for looking!

Ugg thanks for reminding me I have to close out the pool. The ribs look fantastic btw.
