Ok then whats it going to be?

First grind up some of the BT mix.

Now add 2T of chilli bite mix

Had to go uptown.

Got my cure mixing with the water.

Ok this morning is ground beef biltong jerky day.
Yesterday when i mixed i did add 2tsp of wrights hickory red bottle LS.

Silpat sheet down, covered the top with clear wrap. Put the mix down and covered again.

I used my roller and rolled to approx 1/4".
Put my dehydrator jerky screen on the top and used for template. Used the flat spatula to remove any excess meat around the screen.

Next i slid another screen under the silpat mat, but another screen on top of the meat and flipped the mat over.

Then place the screen with the meat onto the dehydrator rack.

Had a small amount of mix so i just rolled it out and put on the screen.

Now into the dehydrator at 160*
Will be done when the meat bends.

Cut into strips. Going to vac and send to my son in Ft Collins.
