Hi, 

 

At what height do you  place a grill from the bottom of a 55 Gallon Drum with a flat lid for a good smoking? I will smoke chicken, turkey, and most of the time pork.

Imo a good height is about 8.5" You'll be able to fit most things in. I wouldn't go deeper than 9. You'll want at least 20" from your grate and the bottom of your basket.
 
I was wondering at what height do you place a diffuser plate from the bottom of the UDS or the Charcoal Basket?

Just put a rack about 6 inches above your charcoal basket for a diffuser, that way you can use it to hold a drip pan also.

Personally I rarely use either but it's there if you need it.
 
I made an adjustable rack system in my drum so I can raise or lower the cooking grate or the charcoal basket.
 
I put a set of bolts through at 3" from the top and another set 9" from the top so that I can run 2 cooking racks at one time or I can use the bottom set of bolts (9") for large items like turkeys.  Hope this helps.

Mine are set at 3" and 6 " from the top.  I may put in one more set at 9"....or on my next one.
