thought I better drop in here and introduce myself. Been a hobby smoker for about 20yrs, I have a bit of experience using most common smoker types, from offset to A-frame tee-pee smoking over an open fire. My current favorite toy is the MES, (call it getting lazy in my old age) As much as I enjoy smoking, my true love is in the cured meats, something about the science and mathematics of it all.
