I'm real actively new to smoking, everything to this point has been on a charcoal grill and it's all turned out very well. I just bought a Bradley Digital smoker and am stoked about using it once the weather breaks a little bit. My biggest question for now is what the top 5 woods would be to get me started? The bisquettes aren't exactly cheap but I want to have a good range to get started. I'm used to Mesquite, Hickory, and Apple. I've mostly done Beef and Pork, but I'm wanting to go into poultry and seafood and I'm thinking those 3 might be a bit strong? I'm really looking forward to strengthening my abilities in the smoking aspect. Seasoning has never been an issue on the grill, but I know seasoning combined with smoking can take it to a whole new level!
