Thanks for the info...Actually I'm not new to the smoking gamed--I've got 30 plus years with hard woods and many different style wood/charcoal grills--but using an electric smoker is new is a first and looking forward to experincing a different way to cook. I've been looking at the MES 40 for about a year.

I actually have rubs and BBQ sauces I've created.

 To SMF from the other side of the state. Lots of great folks here. Just wait till you figure out cold smoking on your MES......You'll been running it all the time. Got questions? Does anyone know how long it takes for my profile to become visible here on SMF...I have around 30 posts and i'm still getting the message about the profile will become visible after I am active on the forum?

Also I replied to one of my original postings and got the message that my reply will show of after it's moderated...I;ve seen that a few times too.
