Thought I should sign up rather than continuing to lurk and take advantage of every ones sharing nature.

I am in Oakville, Ontario, Canada

Currently running a WSM (with a stoker), a Masterbuilt gas smoker, a Weber Performer grill, and a homebuilt gravity fed smoker copied from a Stumps.

If I can get it in the box, I will smoke it.

Also into sausage making and curing of meats, smoking fish (hot and cold) as well as cheese.

I have been doing this for about 40 yrs, and have a fairly strong background in food science.

I am not a competition type guy, and do this solely for the pleasure of feeding my family and friends.

I am always looking for new stuff to try, and learn.

I believe that Vegetarian is the native word for "poor hunter"

Welcome from up the highway in Mississauga. Maybe you can share some of your meat curing and cold smoking experience. I've been curing and drying meats too. Nowhere near 40 years so I am sure you can run circles around me and I would appreciate advice especially considering your food science background.
