Just received a MES 30” 20072218 for Christmas. New to smoking with an MES but owned a Little Chief years ago. So far I have done burgers, figured if I screwed up it wouldn’t cost to much to toss if the cook didn’t work out. The burgers were a little dry and too much smoke flavour. Next time I’ll use a burger recipe with more moisture and less time in the smoker. I have also tried a 3 lbs. pork shoulder roast which turned out excellent inspite of the MES malfunctioning. I’ve been snooping around the forum and I’m very impressed with the various discussions/ideas.
