Continuing breaking in the blackstone and did smash burgers again tonight. These were a bit on the mega side, with each patty being about 1/4 lb - so 1/2 lb smash burgers. My pants have been a little loose anyway.
First time they were good but a little too greasy for my taste, so I focused on a less greasy burger this time around.
Did the bacon first, then patted it dry and put it on a rack to keep it off the griddle, but still above it to keep warm. Next was onions and mushrooms, and again on the rack above the griddle when done. Finally the burgers and buns, and put them on the rack for about a minute or so after to let some of the excess grease drip off. Also made an effort to get way more of the grease pushed up into the trap between ingredients.
Major success, these were much better than Wednesday, and those were still pretty darn good.

And the money shot. Two patties with swiss, bacon between the patties, onions both ways (raw & sauteed), mushrooms, lettuce, and ketchup.
